Fried Chicken

This time I actually like my own fried chicken. I took them out of the freezer and put them in a brine made of sugar, salt, pepper and sambol for a couple of hours. It is then dried, dipped into milk and then flour. Fried up crispy and tasty. Better than Church's.

hv u ever tried to use egg instead of milk. and soda biscuit instead of flour?

Yes, I have and found both a bit heavy to my taste. Years ago I had some great fried chicken on a roadside motel restaurant out in the Blue Ridge Mountains that had a wonderfully crispy and light crust. Some of my Southern friends make great fried chicken with egg and crumbs but I like the lighter style.
