Cucumber Salad


In Northern China, cucumber salad is very popular. The way they do it though is quite unique. The cucumber is not so much cut than cracked. Whole cucumber is smashed into pieces before the dressing is added. Because the fresh crispy cucumber are cracked, the dressing seeps into it in no time and make the cucumber very tasty. Here my dressing is very simply--crushed garlic, sugar, salt, soy sauce, age shanxi vinegar and hot oil. A very refreshing side.
